Aubergine Patties With Tomato Spagetthi

October 11, 2010 by Zizi

Egyik nap megkívántam a paradicsomos spagettit olyan kis édes fasírt golyókkal. Tanakodtam, hogy a húst mire cseréljem ki. A hűtőmben árválkodott négy kisebb padlizsán, amelyeket már időszerű lett volna felhasználni. Hmmm, talán ezekből össze lehet hozni… Az eredmény tökéletes lett.

Hozzávalók:

Padlizsángolyókhoz:
– 4 db kisebb padlizsán vagy 2 db nagyobb
– 1 fej vöröshagyma, felaprítva
– 3 gerezd fokhagyma, felaprítva
– 2 szelet száraz kenyér, beáztatva
– teljeskiörlésű zsemlemorzsa
– fél csokor petrezselyem, felaprítva
– só, bors
– olívaolaj
Paradicsomszószhoz:
– 1 db 400 g-os paradicsom konzerv (ha egész paradicsomosat használunk, turmixgéppel/botmixerrel pürésítsük a paradicsomokat)
– 1 fej vöröshagyma, felaprítva
– 3 gerezd fokhagyma, felaprítva
– 6 levél friss bazsalikom, felaprítva
– só, bors
– olívaolaj
Spagettihez:
– 250 g spagetti
Adjuk hozzá a vöröshagymát, fokhagymát, petrezselymet.

Közben teflon serpenyőben, kevés olívaolajon elkezdhetjük kisütni a padlizsán golyókat. Állandóan forgassuk, hogy minden oldalukon szép barnára piruljanak.

Egy lábasban forraljunk sós vizet a tésztának és főzzuk al dente állagúra a spagettit. Szűrjük le és tegyük félre.

Tálaláskor szedjünk a tányérokba a spagettit, rá a paradicsomszószt és a tetejére helyezzünk néhány padlizsán golyót. Mennyei fogás, amellyel könnyen lenyűgözheted környezetedet!

Lemon Creamy Penne with Roasted Zucchini Cubes

August 5, 2010 by Zizi

Yesterday I cooked the best meal of my life… I think. This creamy, savoury penne is so amazing. I love lemon in every kind of way… its smell and sunny yellow colour is so heartwarming. Isn’t the lemon a fantastic creature of this planet?
I adapted the recipe from Pioneer Woman but I changed a few things. I changed the cream to oat cream, the chicken to zucchini. I also used lemon zest and garlic in the recipe.

Ingredients (serves 4)
– 3 lemon’s freshly squeezed juice
– 1 lemon’s zest
– 200 ml oat creme
– 100 g grated pecorino
– 400 g penne

– 50 g butter
– small handful of basil, chopped
– 1 zucchini (medium size), diced (don’t peel)
– 3 cloves garlic, chopped
– salt, pepper
– olive oil

Method

In a large pot cook penne in salted, boiling water until al dente. Drain it, set aside and keep warm. In the meantime heat a tablespoon of olive oil in a pan and saute the chopped garlic for a couple of minutes. Then add zucchini, season with salt and pepper and roast until golden brown (about 10 minutes).

In  the same pot you used to cook the pasta, melt the butter over medium heat. Add the squeezed lemon juice, zest, pour in the oat creme, whisking it together until combine. When the creme is heated, add the grated pecorino and whisk until the cheese melts. Dump in the cooked penne and stir it around until it’s totally coated. Season with salt and pepper. Sprinkle with the chopped basil. Serve the lemon cream penne into plates, place roasted zucchini on top and enjoy! Yum!

Fusilli with Butternut Squash, Leek and Rosemary Cream Sauce

October 6, 2009 by Zizi

This is an easy, quick recipe I made after a Saturday morning farmers market visit. I. and I have our Saturday morning routine: early morning market, then a cappuccino and croissant treat at one of our favorite cafe and a delicius, yummie, quick lunch at home. And usually a well deserved Saturday afternoon nap… 🙂

What do you do on Saturday mornings?

Fusilli with Butternut Squash, Leek and Rosemary Cream Sauce

Ingredients (serves 2)

– half of a small sized butternut squash
– half of a leek (white part), chopped
– 3 cloves garlic, chopped
– 200 ml oat cream (you can use cream too)
– 1 sprig rosemary, leaves chopped
– 250 g fusilli
– 100 g goat cheese
– 2 tablespoons olive oil
– 1/2 teaspoon freshly grated nutmeg
– salt, pepper

Method

Preheat the oven to 180C (350F). Cut the butternut squash in half length ways. Scoop the seeds out of the squash with a spoon. Drizzle the squash with olive oil and season with salt and pepper. Bake in the oven for 60 minutes or until the vegetables are soft. Then allow to cool. Use only one half to make this meal. From the other half make pumpkin soup.

Heat the olive oil in a pan. Add chopped leek and garlic and saute for 5 minutes. Scoop the soft flesh of the squash out of the skin and add to the pan. Season with salt, pepper, the rosemary and the nutmeg. Add the cream, mix until combine and cook for another 5 minutes over medium heat. Meanwhile cook your pasta al dente in salted water according to package’s directions. Drain and set aside. In the pan mix together the cooked fusilli with the butternut squash creamy sauce. Serve with crumbled goat cheese on top. Yum!
